comes from one of the Beaujolais region's most heralded winemakers — and it lives up to its stellar reputation. Think fresh organic raspberries straight from a farmers' market, with a dash of white pepper and an oyster shell crunch. Moreish and totally smashable — but try not to drink it too quickly, so you can see how it evolves in the glass!

Where and How?
This comes from a high elevation parcel situated just next to Fleurie, (and in Yvon's mind, really should be classified as Fleurie). Organically farmed.
The wine underwent a period of long, low temperature carbonic maceration before ageing. Bottled unfined and unfiltered.
Yvon Métras is the winemaker who turned the iconic Beaujolais ‘Gang of Four’ into the ‘Gang of Five.’ In the late 80s, Métras got to know a group of winemakers (Guy Breton, Marcel Lapierre, Jean Foillard and Jean-Paul Thévenet). They had learnt about the importance of organic viticulture — and how to successfully carry out low-sulfite winemaking— from the biochemist and wine merchant, Jules Chauvet. Yvon employed these methods, and his vineyards (which total just under six hectares) have been tended organically since. Recently, he moved cellars to an area where he has more land; both forest and agricultural. Here, he also tends sheep, aiming to work away from monoculture to bring more diversity to his vineyards. His wines are characterised by a very cool, very long period of fermentation, which combined with healthy old vines, gives these bottles a certain delicacy — and that ever-desirable ethereal quality. These are some of the most heralded wines of the Beaujolais, and for good reason. Drinking a Métras always results in delight… when you’re able to find a bottle.
