A Wine That
is all about the denser side of Chardonnay. If you're a lover of white Burgundy, you'll fall head-over-heels for this. Meaning _white from clay_, the clay soils here lend the wine a certain richness and depth... think fresh lemon juice, with a dash of honey, and the scent of freshly baked brioche.

Where and How?
The Chardonnay for this Champagne is grown in the lieu-dit Biaune. This vineyard is located next to a forest, keeping temperatures cool. Yields are low, which along with cooler temperatures, help to give grapes of incredible quality and concentration.
Ageing take place in 600 litre oak barrels up to ten years in age before then being bottled. This is followed by 'élevage sur lattes', which is where the bottles are aged on wooden racks before being disgorged and re-bottled. This wine is 'non-dosé', meaning that no 'dosage' (extra sugar) was added at the re-bottling stage, resulting in a dry style.

Vouette et Sorbée, located in the southerly most part of Champagne in Buxières-Sur-Arce, in the Aube, has become one of the leading wineries in the Grower Champagne movement.
Bertrand Gautherot began tending his family's vines in the late 80s, and already by the 90s had come to fear the consequences of chemical agriculture, discovering and deciding to pursue the biodynamic path.
