Where and How?
This comes from Pinot Noir, Pinot Meunier and Chardonnay grown on clay-calcareous soils in the village of Polisot in the Côte des Bar, situated in the southern part of Champagne. Fermentation takes place in oak vats and barrels with indigenous yeasts. This is aged for four years on the lees, before then being disgorged. A dosage level of six grams per litre qualifies this Champagne as 'Brut.'
The Winemaker: Champagne Piollot
Champagne Piollot is based in the southernmost part of Champagne, in the Côte des Bars. Roland Piollot and Dominique Moreau are the duo behind this domaine — Dominique is also known for her separate project, _Marie Courtin. _Roland is the 5th generation, with the estate being founded 19th Century. It is a rare domaine as it has massal selection vines, representing a vast genetic diversity. Vines are tended biodynamically, and the Champagnes are made with low intervention.
