Where and How?
This is organically farmed Pinot Noir from Charles' mother's vineyards, planted on the famed Kimmeridgian soils of the Côte des Bar.
The name Bistrotage was given to the wine to highlight the capacity of Champagnes made in this way for food pairing. This is a wine before it's a Champagne, and with its extra body and complexity, it's the perfect partner to not just fish and vegetables, but lighter meats, like chicken.
The Winemaker: Charles Dufour
Charles Dufour is Champagne's rebel child. A fierce drive to do things differently and to follow his gut instinct led him to start out solo, away from his parents. It's not always been an easy ride, and it can get pretty lonely, but Charles has free rein to experiment and step outside of the box of convention. Over the years, his Champagnes have gained international recognition, and are poured in top restaurants around the world. The creativity and energy found within these bottles are like nothing we've ever come across before.
