makes us sit back and breathe a deep sigh of contentment. Sometimes, there's just one crucial word you need for a tasting note: yummy. This wine ticks all of those boxes — think lemon meringue and sea salt, without any of the sugar.

Where and How?
This comes from 20-40 year old biodynamically farmed Chardonnay vines near Pupillin, planted on a steep slope, on clay-limestone soils facing west. The marl soils are named ‘Lias,’ - referring to the early Jurassic (Lower Jurassic) period when they were formed.
30% of the grapes were de-stemmed, the juice was cold settled, then fermented naturally in 600L old oak barrels and foudres, with malolactic also occurring. The wine then aged for 12 months on the lees, being topped up, so this is Burgundian in style. Lightly filtered, unfined, with very low sulfites.
The Winemaker: Domaine de la Borde
The winemaker and farmer of Domaine de la Borde, Julien, came from a family of farmers, and always dreamed of having his own wine domaine. He managed to make this a reality already by the age of 21, when he bought his first vineyard plots in Pupillin. At the start, he also worked as a piano teacher in order to fund his fledgling winery. He now has five hectares of vines which he converted to biodynamics in 2012.
