Pinot Noir

Where and How?

This is a blanc des noirs of Pinot Noir - a white wine made from a black grape. In Champagne, still wines are known as Coteaux Champenois, and in a world that's heating up, Champagne suddenly finds itself capable of world-class still wines, too.

Just 600 bottles of this wine were made - the rest was used as the base wine for Charles' Bistrotage Champagne. The wine was direct-pressed and fermented naturally, after which it aged in an old oak barrel, and was bottled unfined and unfiltered.

The Winemaker: Charles Dufour

Charles Dufour is Champagne's rebel child. A fierce drive to do things differently and to follow his gut instict led him to start out solo, away from his parents. It's not always been an easy ride, and it can get pretty lonely, but Charles has free rein to experiment and step outside of the box of convention. Over the years, his Champagnes have gained international recognition, and are poured in top restaurants around the world. The creativity and energy found within these bottles are like nothing we've ever come across before.
