Where and How?
This comes from biodynamically farmed Chasselas, planted in the commune of Marcorens, near Ballaison, in the Haute-Savoie. The soils are a complex mixture of yellow clay, rocky glacial deposits and a soft, permeable type of sandstone/clay-limestone often found near mountains known as ’molasses.' Some of the vines are ploughed by horse, and during winter sheep graze here acting as natural lawnmowers and composters. The vines are treated with herbal preparations made from plants picked in the mountains and dried at the domaine.
The grapes were directly pressed, after which the juice was cold settled for 2-3 hours. Naturally fermented in concrete eggs, and lightly fined before bottling with bentonite clay.
The Winemaker: Les Vignes de Paradis
The man behind this domaine is Dominique Lucas, who was born and raised in Burgundy, where his family have parcels around the village of Pommard. He now tends his family’s vines in Burgundy, as well as his own domaine in the Haute-Savoie which he purchased in 2008, after moving there in 2002. He is a key figure in the Savoie natural wine movement, and is perhaps the most well-known grower and maker of high-quality Chasselas, helping to bring this variety to new heights.
