Where and How?

The Chardonnay for this cremant was taken from 35 year old vines situated in a vineyard just south of Arbois, on a flatter plane, towards the bottom of a hill. As a result, the marl and limestone soils here are very clayey.
The grapes for this wine were solely from the 2016 vintage. Only a small amount of sulfur was added when the juice was pressed, which helped to give the finished wine a pure, relaxed quality. This was aged in bottles before then being bottled off with no fining and filtration.

The Winemaker: Les Granges Paquenesses

Loreline Laborde of Les Granges Pâquenesses is a one-woman / one-horse (named Amazone) band, based in Tourmont, near Poligny. She cut her winemaking teeth in the Rhône Valley, but like so many others, fell in love with the Jura wine region. She tends 2.5 hectares of vines, a vegetable garden, and also keeps goats and chickens.
She tends her vineyards of Savagnin, Chardonnay, Trousseau and Poulsard organically with biodynamic methods. Her wines are made as hands-off as possible, ageing in older oak barrels and being bottled unfined and unfiltered. She picks a little earlier than average, resulting in taut, mineral, focused wines.
