Where and How?
The Chardonnay for this cremant was taken from 35 year old vines situated in a vineyard just south of Arbois, on a flatter plane, towards the bottom of a hill. As a result, the marl and limestone soils here are very clayey.
The grapes for this wine were solely from the 2016 vintage. Only a small amount of sulfur was added when the juice was pressed, which helped to give the finished wine a pure, relaxed quality. This was aged in bottles before then being bottled off with no fining and filtration.
The Winemaker: Les Granges Paquenesses
She tends her vineyards of Savagnin, Chardonnay, Trousseau and Poulsard organically with biodynamic methods. Her wines are made as hands-off as possible, ageing in older oak barrels and being bottled unfined and unfiltered. She picks a little earlier than average, resulting in taut, mineral, focused wines.
