Crus d'Origine Cuis 2015 — Champagne
A Wine That
stems from Flavien's passion for the diversity of Champagne's incredible terroir. For this project Flavien buys organic fruit from a close friend in the Côtes de Blanc (precisely the village of Cuis) and aims to express a particular character of a village. The result is a breath-taking wine highlighting the chalky, salty expression of Chardonnay found in this sub-region. A special wine from this young shooting star.

Where and How?
This wine comes from a good friend of Flavien, based in Cuis, along the Côtes de Blanc, known for its signature chalky limestone soils and Blanc de Blanc Champagnes. Like with all of Flavien's wines aging takes place in used barrels and secondary fermentation is done under cork (not crown cap) to encourage a better, more consistent lees aging before disgorging.
The Winemaker: Flavien Nowack
Flavien might only be in his early 30s, but he speaks with the wisdom of the generations that came before him.
It’s the type of wisdom that can only come from a thinker—a person who regards their surroundings and contemplates the mysterious ways of nature. It’s thanks to Flavien’s own personal nature, and to his dedication, that this domaine has undergone a rebirth.
Under his guidance, the wines are going from strength to strength, while the vineyards themselves become healthier day by day. His work represents a foray into biodiversity, in a region that desperately needs it.
