calls for date night. We might be stuck at home due to Covid-19, but that doesn't mean we can't get dressed up once in a while - even if just for ourselves! This tastes like lemony-brioche, and demands some self-love - dancing round the kitchen, followed by a bubble bath.

Where and How?
This is organically farmed Chardonnay, Chenin Blanc and Mauzac from the Limoux appellation, situated at high elevation of up to 600m, giving a distinct freshness to the wine.
The wine was naturally fermented and aged in barrels for nine months, after which liqueur de tirage was added, followed by a further 24 months ageing in bottle (traditional method). No dosage (sugar) was added - this is au naturel.
Domaine des Hautes Terres is really what it says on the tin: the domaine of the higher ground (and by that we don't mean anything moral, we just mean they literally sit at a higher elevation - up to 450m). This elevation means that they can produce astounding wines of freshness despite being situated in the south of France.
