Where and How?
This is from this talented duo's second vintage; a chance for them to experiment with a majority-Syrah blend. It comes from their organically tended vines in the southern Rhône, with a smidgen of Grenache.
The grapes were destemmed by hand, and left to macerate in a sealed tank for 14 weeks; untouched; where it fermented naturally. After being pressed, it aged in stainless steel before being bottled unfined, unfiltered and without any added sulfites seven months later. It has aged in bottle since.
