Where and How?
A fortified juice-meets-spirit wine that is a darling of the Jura, macvin is a blend of grape juice (in Labet's case this is 2/3 juice), blended (known as 'muted') with Marc; a grape spirit. This stops the wine from continuing fermentation, and means the alcohol sits at 18%. It is then aged in 228L barrels. A totally unique kind of drink (that we believe everybody much try with comté at least once!) from one of the most heralded winemakers of the region.
The Winemaker: Domaine Labet
As pioneers of the increase in the ‘ouillé’ style, many of their white single vineyard wines are made more akin to Burgundian practices (not oxidative), and as a result are very precise and mineral-driven. In 1997, Julien, Alain’s son, came back from vintages in Burgundy and South Africa (Ramonet and Hamilton Russell respectively) and worked to introduce smaller format old barrels in the cellar, and organic and biodynamic practices in the vineyard. Joined by siblings Charline and Romain, the trio are making some of the most soulful, expressive wines we know.
