A Wine That

is as wonderful as many great Burgundies, and is truly such a bargain — a LITTLEWINE not-so-secret secret. Where else can you find old-vine Chardonnay from biodynamically farmed vines that doesn't break the bank? We struggle to think of a better example, and we can't get enough. Serve this with spring greens and marvel at its purity.

Where and How?

This cuvée is named Patchwork as it is a combination of five Chardonnay vineyards from the Jura, France, all biodynamically farmed. It includes En Courçon, Le Moulin, Le Pont, La Régole and the iconic Les Corvées sous Curon. 60% of the vineyards are planted on clay soils, and 40% on limestone soils. They are all old vines; planted in 1962, 1974 and 1978.
The grapes are hand harvested and pressed directly in a pneumatic press. Fermentation occurs naturally, and the wine is aged in 228L barrels with 10% new oak for 12 months. It is lightly filtered before bottling, with just the tiniest sprinkling of sulfites (below 20mg/L).

The Winemaker: Domaine Tissot

Stéphane Tissot believes that great emotion can be found in a bottle of wine. That emotion, however, he reminds us adamantly can only be transported to the glass from vineyards that are farmed organically. He underlines that wine is not a necessity: it isn’t like corn or wheat which is essential for food production. This makes us think in ways we haven’t thought before; there really should be no excuse for chemically treated, unhealthy, unhappy vineyards.
He also believes that the wine he makes reflects his personality. As he changes and grows, so do his wines. He is a man that never stands still, but continues his quest of trying to improve his wines, year on year.
