Where and How?
This biodynamic Savagnin from the Arbois, Jura, comes from the 'trias' clay vineyards of 'En Spois' and 'La Vasée,' facing east and north-west. The vines were planted between 1968 and 2000.
The grapes are hand-harvested, destemmed and pressed in a pneumatic press. The fermentation occurs naturally, and the wine is aged in 228L barrels on the lees for 32 months without being topped up, under a 'voile' (a surface yeast; this gives a nutty profile to the wine). The wine is bottled after a light filtration. For the oxidative wines of Tissot, they use a very small amount of sulfites before fermentation, and after ageing the sulfite addition is no longer necessary (as the sulfites bind with the aldehydes).

Stéphane Tissot believes that great emotion can be found in a bottle of wine. That emotion, however, he reminds us adamantly can only be transported to the glass from vineyards that are farmed organically. He underlines that wine is not a necessity: it isn’t like corn or wheat which is essential for food production. This makes us think in ways we haven’t thought before; there really should be no excuse for chemically treated, unhealthy, unhappy vineyards.
He also believes that the wine he makes reflects his personality. As he changes and grows, so do his wines. He is a man that never stands still, but continues his quest of trying to improve his wines, year on year.
