Where and How?
This biodynamic Pinot Noir comes from soils with limestone at the surface and 'lias' clay beneath, planted on east and west facing slopes. The vines are 38 years old.
The whole bunches of Pinot Noir are macerated without sulfites for four weeks in a tronconic vat. The grapes are then pressed, and the wine finishes its natural fermentation in barrels (15% new) for one year. The wine is gently filtered after malolactic fermentation and then bottled without additional filtration.
Just 4,800 bottles made.
