Where and How?
This is biodynamically farmed Trousseau from five vineyards in the Jura — Rosières, Béranger, En Muzard, Corvées sous Curon and above the Bruyères parcel (east side) and Chevrette. They are planted on limestone and 'lias' clay; with many old vines (planted 1955, 1952, 1942, 2002, 1965 and 1930).
The grapes are hand harvested in small boxes, and very strictly sorted while manually being destemmed. The grapes then macerate for four weeks in a tronconic vat with some gentle punchdowns. The juice ferments naturally, and the wine is aged for four weeks in 'demi-muids' (600L barrels) for one year. Bottled unfined and unfiltered with low sulfites.

He also believes that the wine he makes reflects his personality. As he changes and grows, so do his wines. He is a man that never stands still, but continues his quest of trying to improve his wines, year on year.
