Where and How?
From Dominique Moreau's biodynamic vines in Polisot, in the Champagne-Ardenne region.
The majority of Dominique's 2.5ha vineyard is planted to Pinot Noir, but a small section is Chardonnay, from which she makes this gem. Fermentation occurs naturally in old Burgundy barrels, ageing for at least 40 months on the lees. Unfined and unfiltered, with minimal sulphur, and very low dosage.
