A Wine That

will explain to you in one sip what earthiness means in wine, and why it can be such a beautiful thing. With fine-grained almost dusty tannins that gently sit on your tongue bringing flavours of bramble fruit, lavender and thyme, it’s the graphite side of this wine, however, that really shines through. If you like savoury things, then this needs a place in your wine rack.

Garnacha Tintorera
Moravia Agria

Where and How?

This comes cuvée comes from the grape varieties Garnacha Tintorera and Moravia Agria, the latter of which is extremely rare: there are only 40 hectares left in Spain. The vineyards sit high at 800m altitude in Castilla-La Mancha, planted on chalky clay soils, and are tended organically by Laura Ramos, one of the four founders of Envínate.

Laura also carries out the vinification. The wine fermented naturally with 40% whole bunches in large concrete tanks with 30% whole bunches, after which it was aged for eight months in the concrete. It was bottled unfined, unfiltered, with just a small touch of sulphur.

The Winemaker

​Going to school and university is about a lot more than education; they give birth to friendships and business ideas. In the case of Envínate, it was at the University of Miguel Hernández in Alicante that Laura Ramos, Jose Martínez, Roberto Santana and Alfonso Torrente met while studying oenology. This quartet of bright minds did not have family-owned wineries behind them, but they did have a joint love for organic viticulture and low intervention winemaking.⁣
In the Beaujolais region, there is a group of winemakers nicknamed the Gang of Four who revived organic viticulture and quality winemaking in the region in the 80s. Well, this is the Spanish Gang of Four. Together their efforts have put the indigenous varieties of northern Spain on the map of fine wine.
