Where and How?

This is a new wine from Fedellos do Couto, which can only mean one thing: they fell in love with another old vineyard and decided to rescue it from abandon. This is 60-80 year old vines near the village of Soutipedre, at 450m elevation, farmed organically.
The wine is whole bunch pressed and left to ferment naturally. Aged in old oak 500L barrels for eight months. Unfined and unfiltered.

The Winemaker: Fedellos do Couto

The Fedellos do Couto group of winemakers have been regenerating old vine parcels across the Ribeira Sacra, creating beautiful wines from the likes of Bastarda (Trousseau) and Mencía. With a natural winemaking approach - unfined, unfiltered, with just a touch of sulphur - these are some of Spain's most exciting wines.
