Where and How?
This rosé blend with a majority of Pinot Noir (80% Pinot, 20% Chardonnay) comes from a 40-year-old co-planted vineyard on sand, marl, and limestone.
A 12-hour maceration takes place, after which the wine ferments naturally and is aged for ten months in barrels. Press and free-run juice are blended together. No Dosage & disgorged in April 2019.
The Winemaker: Thomas Perseval
Under his guiding hand, the vineyards have been organically certified since 2012, and the Champagnes seem to become more and more energetic with every new cuvée that is released. As Thomas says, "I really believe that human energy is transmitted to the wine."
