La Pucelle 2015 — Champagne
A Wine That
shows the deep potential of Champagne's sub-region 'Montagne de Reims'. 'La Pucelle' is a special parcel in Chamery, Thomas' home village. Here, Thomas wants to show the intricacies of every individual vineyard. The result is a deeply moving wine. The texture compares to some of the best expressions of Burgundy or Jura, showing a wonderfully rich and expressive aroma of black tea and roasted hazelnuts.

Where and How?
This wine comes from vines planted in 1961. The soils are a mixture of sand and silt. At harvest, grapes are pressed in Thomas' Coquard press and transferred into 228l and 400l barrels. The still wine then ages for 9 months on the full leese before being bottled for secondary fermentation in July 2016. Finally, the bottles are disgorged by hand (à la volée) in January 2020.
The Winemaker: Thomas Perseval
This little 2.5 hectare grower Champagne gem has been passed down through the generations to Thomas.
Under his guiding hand, the vineyards have been organically certified since 2012, and the Champagnes seem to become more and more energetic with every new cuvée that is released. As Thomas says, "I really believe that human energy is transmitted to the wine."
These bottles exemplify Champagne, nature and the human hand in perfect harmony.
