La Pucelle Rosé 2018 — Champagne
A Wine That
resembles the delicate and thoughtful side of Thomas. These are truly vinous sparkling Champagnes — just like a complex bottle of single-vineyard Burgundy it boasts with red fruits and a beautiful layer of Christmas spices. The perfect bottle for fresh seafood and baked apple Tarte Tatin.

Where and How?
This wine comes from vines planted in 1961. The soils are a mixture of sand and silt. At harvest, grapes are destemmed and macerated for a short period before being pressed in Thomas' Coquard press and transferred into 228l and 400l barrels. The still wine then ages for 10 months on the full leese before being bottled for secondary fermentation in August 2019. Finally, the bottles are disgorged by hand (à la volée) in November 2020.
The Winemaker: Thomas Perseval
This little 2.5 hectare grower Champagne gem has been passed down through the generations to Thomas.
Under his guiding hand, the vineyards have been organically certified since 2012, and the Champagnes seem to become more and more energetic with every new cuvée that is released. As Thomas says, "I really believe that human energy is transmitted to the wine."
These bottles exemplify Champagne, nature and the human hand in perfect harmony.
