La Tuillerie 2016 — Champagne
A Wine That
is an homage to Flavien's ancestor Fernand Nowack who planted vines on this plot of land that was historically used for drying the bricks and roof tiles of the Nowack manufacturing company. It was from this point forward that the Nowack’s became Champagne growers instead of tilemakers. Year by year 'Tuilerie' is the most textured example of Flavien's selection, rich and generous while boasting a great deal of acidity.

Where and How?
This wine comes from a southwest facing single-vineyard slope in Vandieres, within the Marnes valley. The geology consist mainly of chalk and sand at an altitude of 100m above sea level. The still wine is aged in used barrels after which second fermentation takes place under cork (not crown cap usually used) to encourage more complex bottle lees aging. Dosage is kept at a minimum (1g/l) and the wine is disgorged in January 2021.

Flavien might only be in his early 30s, but he speaks with the wisdom of the generations that came before him.
