Les Combes — Chardonnay - 2018

Clay Marlstone

Where and How?

This cuvée takes its name from the beautiful coteau Les Combes in Passenans, where a distinctive heavy and clay-rich marlstone can be found. The Chardonnay for this wine was taken from vines replanted in the 60s. Low yields mean that the grapes have a wonderful intensity to them.

Fermentation took place using indigenous yeasts in decade old oak barrels, before then ageing on the lees in old Meursault barrels.

Bottles unfined and unfiltered with minimal, if any, sulfites.

The Winemaker: Les Dolomies

Céline & Steve Gormally live in the village of Passenans, in the Jura. Their house backs directly onto a vegetable garden where their donkeys and ducks also live. They farm their Savagnin, Chardonnay, Pinot, Poulsard & Trousseau according to biodynamic & permaculture principles and make wine with minimal intervention.
"Having different elements such as trees and a pond attract different insects and birds – another type of fauna and flora – which improves the diversity of the ecosystem."
