A Wine That
you would want to open at almost any dinner gathering, regardless of what you're eating. A hearty Schnitzel? Perfect. A delicate summer salad? Also perfect. What's more, its clean vibrancy and mineral shine would please any sort of guest, be it a low-intervention addict or a natural wine newbie.

Where and How?
Peter sourced the Chardonnay for this wine from another local organic grower in the Mâcon-Bray area, who also happens to be his good friend. The grapes are grown at a relatively high altitude (between 300 and 400m), which means that acidity and freshness is preserved, even in hotter years.
After the grapes were pressed, they underwent fermentation in steel tanks. Fermentation is slow in Peter's cool cellar, which means that it can take many months for the the sugar in the wine to be consumed by the yeasts and become dry. The wine then rested on its lees for almost a year, which helps to create complexity, along with the slow fermentation.
Bottled unfined, unfiltered and with a small sulfite addition.
The Winemaker: Domaine de Thalie
The rolling hills of Burgundy’s Mâconnais region are particularly celebrated for vibrant Chardonnay, but there are also excellent Pinot Noir and Gamay vineyards here; some of which are home to treasured old vines.
One of the winemakers who found himself enamoured by this microclimate is Peter Gierszewski, of Domaine de Thalie. Previously a chemistry student turned wine merchant, when the opportunity arose to delve in headfirst to the world of farming and winemaking, there was no turning back.
