Where and How?
The Gamay for this wine comes from 60 year old vines situated on marl soils in the Mâcon region of Burgundy, and is farmed organically. Peter chose to leave the bunches whole, which underwent a semi-carbonic maceration in steel tanks. After a few days, the layer of grapes floating at the top of the tanks were gently punched down (gentle despite the violent name), which helps to give some structure to the wine. Following this, the wine sat together with the skins for 20 days, and was then pressed. Finally, it was transferred to 500L 'futs' (oak barrels), where it rested peacefully for one year, untouched.
Bottled unfined, unfiltered and with a small sulfite addition.
The Winemaker: Domaine de Thalie
The rolling hills of Burgundy’s Mâconnais region are particularly celebrated for vibrant Chardonnay, but there are also excellent Pinot Noir and Gamay vineyards here; some of which are home to treasured old vines.
One of the winemakers who found himself enamoured by this microclimate is Peter Gierszewski, of Domaine de Thalie. Previously a chemistry student turned wine merchant, when the opportunity arose to delve in headfirst to the world of farming and winemaking, there was no turning back.
