Sauvignon Blanc 'Gin Tonic' 2017
A Wine That
according to Milan is like 'a cocktail in a wineglass'. He adds 'I remember a time when winemakers in our village used to say “if you don't have sauvignon in the cellar, you ain't no winemaker” because everybody was trying to make a hardcore “nettle-y” wine from unripe pyrazine grapes. The first time Milan made his 'atypical' Sauvignon in 2015 the juice smelled intensely of juniper berries and had a slight bitter aftertaste like tonic. Few years later it's probably our all-time favourite wine from Milan - a Ground Zero hallmark for Czech wine and beyond and one of the best expressions of Sauvignon ever.

Where and How?
Milan works across 12 different plots all situated around his home village 'Velké Bilovice in the Southern part of Moravia. His approach in the vineyards has always been 'normal' which to his terms means not using any herbicide, pesticide, industrial or systemic fertilisers and focusing on a healthy eco-system which allows for a balanced flora and fauna. By definition, Milan does not have a vineyard or winemaking recipe hence each year will see a different take on how to vinify and age his wines. His colourful labels tend to be released at an earlier stage and come from younger vines while his 'old vines' are characterized by the more serious minimalistic labels.
The Winemaker: Milan Nestarec
To many Milan Nestarec has been the single most important reason that have opened their eyes for wines made from Central and Eastern Europe. Based in the Southern part of Moravia (virtually on the border with Austria to the South), Milan has never always been excited to go beyond the region, connecting early with fellow winemakers around Europe and trying out many experiments (both good & bad) that have allowed him to progress and become a refined winemaker only within a few years. His wines all have a lightning energy, like listening to Daft Punk and Pink Floyd arranging the greatest concert of all times.
