A Wine That

Where and How?
This comes from 50+-year-old organically farmed vines on Mount Etna, in Sicily. Frank Cornelissen explains,
"A rich and fragrant wine of pure Nerello Mascalese from different vineyards, partly from our best parcels where we produce our crus (Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-sottana and Porcaria) as well as designated vineyards for this specific wine (Rampante sottana, Piano Daini and Crasà). A classic, traditional Nerello Mascalese with tannins and sweetness of ripe fruit. My vision of a traditional, balanced and rich Northern Valley Etna wine."
The grapes are destemmed and lightly crushed, after which natural fermentation commences, aided by a pied de cuve. The wine stays with its skins for fifty days, and is fermented and aged in neutral epoxy tanks of between 2500L to 7000L for 12 months, before being bottled unfined, lightly filtered and with a touch of sulfites.
The Winemaker: Frank Cornelissen
He is not afraid to say what he thinks; he is always brutally honest; with others, too, but with none so much as with himself. This means that any winemaking philosophy he may have at a given moment in time will happily be shoved out of the window in the name of quality. He is a man on a one-way street to facilitate purity.
