A Wine That

has recently become a staple in our wine rack — this ticks all of the boxes for your go-to organic French red without costing the earth. Think blackcurrant and bramble fruit wit that intoxicating scent of fresh earth when it's been raining, with a lovely warming depth... this is best described as a hug in a bottle.

Where and How?

This comes from organically farmed vines of Carignan (majority), Grenache and a touch of Syrah. Planted on the southeast slopes of the hilly range ‘Le Pinada de Boutenac,' on clay-limestone soils.
The grapes were destemmed, after which the wine fermented naturally. Bottled unfined, with very low sulfites (below 30ppm).

The Winemaker: Chateaux Ollieux Romanis

This remarkable project represents what is possible on a large scale: this family, based in Montséret, owns and farms one of the largest vineyards held by a winemaker within the Corbières Appellation (150 hectares in the Boutenac A.O.C. zone!) They have gradually been converting to organic farming throughout the years, and have now achieved certification.

Domaine Pierre Bories is the name that covers the vineyards which Pierre Bories owns and farms, as well as a team of people who work closely with him. They name themselves “Artisans-Partisans” (loosely translated as “Craftsmen-Associates”) and have a shared goal of a greener future for the region, with their motto of strength lies in numbers.

Fun fact: The name of this cuvée ’Lo Petit Fantet d’Hippolyte’ was chosen by Pierre as he always tries to include some Occitan words on his labels: Lo means’ ‘the’ ‘Petit’ means ”Little”, and “Fan” means ’child’, and FANTET means ”Little child” Hippolyte is the name of Pierre’s son, who was born in 2004. Hippolyte wanted to “have a wine that he could “call his own”, so Pierre named this wine ’Lo Petit Fantet d’Hippolyte’. The naïve painting of a vineyard that adorns the label of this wine is a painting done by Hippolyte, with the help of his mother.
