is without a doubt truly serious. A university professor in a bottle — but an open-minded one. It's all about depth of flavour and that impossible-to-describe ethereal side of Pinot Noir: think forest floor, fresh mushrooms but with a wild, sea mist edge. If angels drink wine, we're pretty certain they drink this.

Pinot Noir

Where and How?

This Pinot Noir is organically farmed on limestone soils. It's one of the coolest Pinot sites in North Canterbury, which gives it its beautiful delicate floral aromas.
The fruit was destemmed, and the wine fermented naturally over a period of six weeks. The extraction was infusion-like in order to give the wine a very gentle structure with silky tannins. Bottled unfined and unfiltered with low sulfites.

The Winemaker: The Hermit Ram

Theo Coles of The Hermit Ram has become known for his natural expressions of New Zealand through blends, skin-contact and amphorae. His approach is about letting New Zealand's terroir shine, with very little intervention. He has also planted a baby vineyard of his own, which he tends according to permaculture principles, inspired by the likes of Fukuoka. This is New Zealand wine as you haven't seen it before.
