Where and How?

This comes from 35-year-old+ Pinot Noir vines, planted on the Trouillots parcel on ‘Lias’ clay soils, farmed organically since 2014.
The whole bunches were macerated in stainless steel for 15 days, during which time natural fermentation began, after which the wine aged in a mix of stainless steel and barrels. Bottled unfined, unfiltered and without added sulfites.

The Winemaker: Valentin Morel

Valentin Morel is one of the young guns of the Jura region. Having originally studied law, he decided that he preferred the outdoors life to that of a desk, so he did some winemaking internships in Alsace with the likes of Bruno Schueller and Jean-Pierre Frick. He took over his family’s winery in 2014, and now tends six hectares of Chardonnay, Savagnin, Trousseau, Pinot Noir and Poulsard; the classic Jura varieties.
His winemaking is low intervention, focused on creating pure wines with no additions, and his wines are impressing us more and more with every vintage. A star in the making!
