Where and How?
Sauletas: "The Sun" This is from 50-year-old vines planted on Kimmeridgian limestone.
Harvested with 50% botrytis affected grapes. After pressing, grapes are aged for two years in cuves, then an extra year in large old foudres before bottling. Unfined, unfiltered and without added sulphites.
The Winemaker: Sebastien Riffault
Sébastien Riffault is one of those rare people who aren't afraid of going completely against the grain. In a region that's known for its strict, technologically-made wines, Sébastien decided that wouldn't work for him. Having been inspired by tasting natural wines, early on he ditched the sulphites, switched to biodynamic farming and decided to embrace riper fruit. The results are deep and soulful expressions of Sauvignon.
