A Wine That
is all about the wilder side of Sauvignon Blanc. There's stil that beautiful, green, sappy edge that the variety is famous for, but there's a rumbling ocean spray sitting beneath the surface. It's a wine that reminds Theo, the maker, of the New Zealand coastline. And if the NZ coastline smells this good, we'll be on a plane as soon as we can.

Where and How?
This comes from two organically farmed sites in the Waipara Valley.
The grapes are destemmed and the juice ferments naturally on the skins for six weeks (very gentle maceration - for phenolics and texture but not too much extraction). 20% is fermented with whole bunches, and the two portions are blended when the fruit is pressed after maceration. Bottled as soon as malolactic has happened to preserve freshness, and without any sulphites added, unfined and unfiltered.
The Winemaker: The Hermit Ram
Theo Coles of The Hermit Ram has become known for his natural expressions of New Zealand through blends, skin-contact and amphorae. His approach is about letting New Zealand's terroir shine, with very little intervention. He has also planted a baby vineyard of his own, which he tends according to permaculture principles, inspired by the likes of Fukuoka. This is New Zealand wine as you haven't seen it before.
