Where and How?
The Savagnin for this wine came from an organically farmed 40 year old vineyard named Cesancey, situated south of the Côtes-du-Jura AC. The Savagnin is planted on white marl after which the domaine is named.
As with all of their wines, fermentation took place thanks to wild yeasts. The wine was aged in fûts (old oak barrels) for a year, followed by foudres (larger oak vessels) for another year. The wine was regularly topped up (known as the ouillé method) which prevents any oxidation from occurring, keeping the wine fresh in style.
Bottled unfined and unfiltered, with a minimal amount of sulfur (around 20 mg/l in total).
The Winemaker: Les Marnes Blanches
Les Marnes Blanches, meaning ‘white marl’ in French — a nod to the famous soils of the area — is run by Pauline and Gérard Fromont; both of whom grew up in the Jura and whose families owned tiny plots in the region, from which they’d make their own wines for drinking at home. They met while studying winemaking, and founded their domaine together in 2006.
Since the beginning they have worked organically, and have collected vineyards throughout the years to bring them to their 12 hectares today. Winemaking is hands-off, with low or no sulphites, and the wines are beautiful, pure expressions of their varied soil types and Jura varieties.
