Sauvignon Blanc

Where and How?

Auksinis: “Golden” — this is Sauvignon Blanc from 50-year-old vines in Verdigny,grown on clay-limestone soils. Picked with 50% Botrytis affected grapes, and whole bunch macerated for one week. After pressing, the wine is aged for two years in cuve, then an extra year in large old foudres before bottling. Unfined, unfiltered and without sulphites.

The Winemaker: Sebastien Riffault

Sébastien Riffault is one of those rare people who aren't afraid of going completely against the grain. In a region that's known for its strict, technologically-made wines, Sébastien decided that wouldn't work for him. Having been inspired by tasting natural wines, early on he ditched the sulphites, switched to biodynamic farming and decided to embrace riper fruit. The results are deep and soulful expressions of Sauvignon.
