A Wine That
lifts our spirits. This is elegant Burgundian Chardonnay in all its glory - no buttery or oaky flavours to be found here. Instead, this is graceful and chic; an Audrey Hepburn kinda Chardonnay. Mineral, with grapefruit zest and jasmine flowers, you'll be stuck with your nose in this glass for a while.

Where and How?
This is Chardonnay planted in the 80s on steep slopes with limestone soils, biodynamic since the beginning of its life. Destemmed and crushed, the must is put into a tank for two to three days, then transferred by gravity into old oak barrels where the wine ferments naturally.
It was aged for around ten months before being bottled unfined, unfiltered with just a tiny touch of sulphur.
Dominique may have officially retired, but he still spends his days in the vineyards and in the cellar, tasting with Julien Altaber and Carole Schwab; the duo who have taken over the domaine. Honouring Dominique, they continue to make the wines under his name and according to his vinification practices, for this is not simply a retired vigneron. Dominique has been a friend, teacher and influence for so many aspiring farmers and winemakers who wish to work without chemicals.
Here, it has never been about making fancy, dressed-up wines in their tuxedos, dresses and heels. Rather, this is Burgundy in the nude - it is the skin and bones of these old vines that speak through the unadulterated wines.
