shows a soulful side to Chardonnay. Salty, almost earthy aromas with a touch of honeysuckle, there's also some tannin from the skin contact here, which makes it an awesome wine for food pairings. Where and How?

This comes from 35-year-old+ Chardonnay vines planted on the marl soils of Trouillots, on a parcel known as ‘Aubert,’ undergoing organic conversion.
The grapes were destemmed, and then underwent skin contact for ten days in stainless steel, fermenting naturally. The wine then aged in demi-muids (500L barrels) for two years. Bottled unfined, unfiltered and without added sulfites.

The Winemaker: Valentin Morel

Valentin Morel is one of the young guns of the Jura region. Having originally studied law, he decided that he preferred the outdoors life to that of a desk, so he did some winemaking internships in Alsace with the likes of Bruno Schueller and Jean-Pierre Frick. He took over his family’s winery in 2014, and now tends six hectares of Chardonnay, Savagnin, Trousseau, Pinot Noir and Poulsard; the classic Jura varieties.
His winemaking is low intervention, focused on creating pure wines with no additions, and his wines are impressing us more and more with every vintage. A star in the making!
