Where and How?

This comes from 35-year-old+ Chardonnay vines planted on the ‘Lias’ clay-limestone soils of Trouillots, a vineyard undergoing organic conversion.
The whole bunches were pressed directly, and the wine fermented naturally in 228L Burgundy barrels. It was slow to ferment, so Valentin added some lees from 2017 Savagnin to finish the fermentation, resulting in what we think is extra complexity.

The Winemaker: Valentin Morel

Valentin Morel is one of the young guns of the Jura region. Having originally studied law, he decided that he preferred the outdoors life to that of a desk, so he did some winemaking internships in Alsace with the likes of Bruno Schueller and Jean-Pierre Frick. He took over his family’s winery in 2014, and now tends six hectares of Chardonnay, Savagnin, Trousseau, Pinot Noir and Poulsard; the classic Jura varieties.
His winemaking is low intervention, focused on creating pure wines with no additions, and his wines are impressing us more and more with every vintage. A star in the making!
