Where and How?
This comes from the heartland of Pinot Noir in Burgundy's Côte-de-Beaune: Volnay. It's a blend of parcels in the northern and southern parts of the appellation, all massal selection, on clay limestone soil, and farmed biodynamically by the family.
The grapes are destemed, and the wine ferments naturally before being aged in older oak barrels. Bottled unfiltered.
The Winemaker: Michel Lafarge
The Volnay domaine of Lafarge is one of a very small handful of domaines in Burgundy that never planted clones, meaning every one of their vineyard represents an incredibly diverse history of Pinot Noir, Chardonnay and Aligoté.
They maintain traditions and legacies through their vine material and fermenting all their wines naturally (a lab yeast has never even entered their cellar), but they're also very forward-thinking. Their latest planting, for example, is circular: to make it easier to plough, but also to introduce nature's vortex into a planting system.
